The Mutton

Our mutton is from a hill breed of sheep, is grown slowly on rough upland pasture and is from two and a half year old castrated males.  All together this means that the flavour is deep and the texture is fine. 

Cooking our Mutton

Our Prime Mutton is old enough to have developed real flavour, but not old enough to become tough or stringy. You can use our mutton in any recipe that calls for Lamb, although you will need to be aware that the stronger flavour will show through a lot more.  In a curry or other strongly flavoured dish, you will still be able to taste the meat itself, whereas in a less flavoured dish, the meat will be the main flavour.

Our Customers

We sell many of our carcasses to highly regarded local restaurants, and you will usually find it incorporated into their dishes over the winter months: Yorke Arms in Nidderdale Thirteen Simonstone Hall Ozone Coffee Roasters We can also supply whole or half carcasses direct to private customers by arrangement between October and March.  Delivery can be arranged if required within the UK.
